Clonal/Rootstock Selection The vines are pruned to ‘two canes’ to limit the crop loading and increase the fruit intensity on this soil type. The clone is a mass selection on Schwarzman rootstock.
Winemaking Details Picked in thefirst week of April 2009, the grapes harvested were crushed and gently bag pressed off to achieve fresh, clear, juice. The juice was then fermented slowly at cool temperatures to retain the very distinctive regional and varietal characters.
Aroma & Palate The wine is light straw in colour with green highlights. Lifted aromas of passionfruit, grapefruit and strong mineral notes characterise the nose whilst the palate structure is balanced around a strong acid backbone, with lingering melon and passionfruit flavours. Note the minimal amount of green highlight - reflective of the warm nature of this site.
Cellaring and Food MatchingThis wine can be matched with grilled oysters, barbecued prawns or salmon, and poached white fi sh with fresh green salads containing parsley, pepper or lemon. Mediterranean and Turkish dishes with hummus, olives and feta will also match well. This wine is made to drink over the next two years.

Winemaking Details Picked during the second and third week in April 2009, the grapes were crushed and gently bag pressed off to achieve fresh, clear, juice. The juice was then fermented slowly at cool temperatures to retain the very distinctive regional and varietal characters.
Aroma & Palate Light straw in colour, with green highlights. The wine displays a vibrant fresh aroma of tropical fruit with herbal overtones which give it complexity. This is a distinctive fruit driven style with racy acidity.
Cellaring and Food Matching This wine is a perfect accompaniment for sautéed chicken breast served with tapenade and a garden salad. Though made to drink whilst it is young and vivacious, this wine may be cellared for up to two years to develop further complexity.

Aroma & Palate Light straw in colour with green highlights. Whale Bay Sauvignon Blanc has rich citrus and tropical fruit flavours. This wine is fresh and and distinctive with fragrant aromas of passionfruit and dry grass, it is well balanced with a lingering finish.
Cellaring and Food Matching This wine is a perfect accompaniment for a grilled haloumi cheese salad with cherry tomato and mandarin orange segments, lightly dressed with a simple, herb vinaigrette. This wine is made to drink whilst it is young and vivacious.
